Brewing in smaller quantities ensures a quality ferment each and every batch, allowing the (SCOBY) yeast and bacteria to properly do their transformation.
In turn you receive Raw kombucha, never pasteurized, just the way the SCOBY intended it. Brewed in glass then served in glass to you.
